
Homemade crispy potato chips use just a small amount of oil, unlike store-bought chips that are deep-fried. You can use absolutely any spices you like and add them in whatever amounts you prefer. The chips can be made in the microwave or in the oven. I made them both ways for comparison — see the details below.
Ingredients:
- 2 medium potatoes (300 g)
- 1 tbsp vegetable oil + more for greasing
- Spices:
- a large pinch of fine salt
- a large pinch of paprika
- a pinch of ground black pepper
- a knife-tip of hot chili pepper

How to cook homemade potato chips
Peel and wash the potatoes. Slice them into thin rounds about 2 mm thick. You can do this with a food processor, a mandoline slicer, or a vegetable knife. Try to make all the slices roughly the same thickness so they cook evenly.

Add the vegetable oil and spices, then mix thoroughly by hand so that the slices are coated on all sides.

To make chips in the oven: Line a baking sheet with parchment paper and grease it with vegetable oil, or simply grease the baking sheet directly. Arrange the potato slices in a single layer. Place in an oven preheated to 200°C. Bake for approximately 15–25 minutes. Some slices may be done sooner, so remove those early to prevent them from over-browning.

To make chips in the microwave: Generously grease a large flat plate with vegetable oil. Arrange the potato slices on the plate and microwave on full power for 3–7 minutes. It's best to check on them every couple of minutes at first to figure out the right timing for your particular microwave. My microwave is 800 W and I cooked them for 5 minutes 30 seconds.

In the photo, the chips on the left were made in the oven and those on the right in the microwave. The taste differs quite noticeably. Oven chips – fairly oily, brittle, and a little sharp on the edges when you bite into them. Microwave chips – less oily, a brighter yellow color, satisfyingly crunchy, and evenly cooked all the way through. My clear conclusion: chips made in the microwave are much tastier than those made in the oven, so I highly recommend going with the microwave.
