
During fasting season, buckwheat is one of the most popular staples — today I'd like to share a version made with vegetables and mushrooms. The soy sauce gives it a unique, rich flavor. Overall, it's a well-balanced and delicious dish. You can swap the zucchini for Italian zucchini, or leave it out entirely — it'll still taste great.
Ingredients:
- 350 ml water
- 200 g cremini mushrooms
- 150 g buckwheat
- 150 g bell pepper
- 150 g zucchini
- 100 g onion
- 3 tbsp vegetable oil
- 1 tbsp soy sauce
- salt, pepper, garlic
