A delicious, hearty, and pleasantly spicy salad. It features poached chicken breast fillet, spicy Korean-style carrots, pickled onion, and unique omelet strips that are surprisingly easy to make. By the way, the deeper yellow the egg yolk, the more vibrant the omelet strips will be (I used farm-fresh eggs). You can buy ready-made Korean-style carrots or make them using this recipe.
Ingredients:
- 300 g chicken breast fillet
- 200 g Korean-style carrots
- 100 g onion
- 3 tbsp 6% vinegar
- 3 eggs
- salt
- mayonnaise for dressing
- vegetable oil for frying

How to cook chicken salad with omelet strips
Poach the chicken breast fillet in salted water (cook for 20 minutes from the moment it comes to a boil).

In the same way, cook the remaining two eggs one at a time. Stack the thin omelets on top of each other.
