
A delicious, vanilla-flavored cottage cheese filling coated in milk chocolate. These little bars will be a hit with both kids and adults — they taste very much like the store-bought cottage cheese bars that come in bright packaging, but they look far more impressive than anything you can buy. To make these, you'll need medium-sized silicone molds and a silicone pastry brush. I used milk chocolate — make sure to use good-quality chocolate so it melts smoothly. I used smooth, 9% fat cottage cheese. If your cottage cheese is grainy, press it through a fine-mesh strainer or sieve before using.
Ingredients:
- 200 g cottage cheese
- 100 g milk chocolate
- 30 g butter
- 2 tbsp sugar
- 1 tsp vanilla sugar

How to cook chocolate-covered cottage cheese bars
Break the chocolate into pieces and place in a small saucepan. Set up a double boiler — place the saucepan with chocolate inside a larger pot of water (the water should not touch the bottom of the inner saucepan).

Using a silicone pastry brush, coat the molds with chocolate (it's okay if there are thin spots). Place in the freezer for 5 minutes. Keep the chocolate melted by leaving the heat on the lowest setting.

Apply a second coat of chocolate to the molds. Leave a small amount of chocolate in the saucepan for the bottoms.

Melt the butter in the microwave, then add the sugar and vanilla sugar, stir, and mix well until combined.

Fill the molds with the cottage cheese mixture, almost to the top. Place in the freezer for 20 minutes.

Pour chocolate over the top of each cavity to seal. Place in the freezer for about 30 minutes, until the chocolate is completely set.
