
To make homemade mayonnaise in a blender, you'll need an immersion blender and a blender cup (a half-liter jar works just as well). With an immersion blender, the whole process takes no more than 2–3 minutes. The homemade mayonnaise comes out the familiar white color and works beautifully in salads. It's not recommended for baking, as the oil will separate when heated. This recipe uses a whole egg — the fresher, the better. The amount of salt and vinegar can be adjusted to taste. You can also add, if you like, 1/2 tsp of mustard, a pressed garlic clove, or some fresh chopped herbs. It'll be delicious!
Ingredients:
- 200 ml neutral-flavored vegetable oil
- 1 fresh egg
- 1 tsp vinegar
- 1/4 tsp salt

How to cook homemade blender mayonnaise
Wash the egg thoroughly with hot soapy water and dry it (this warms the egg slightly and removes any bacteria from the shell surface). Carefully crack the egg into the blender cup, trying not to break the yolk. Add the salt.

Turn the blender on at the lowest speed. After a few seconds, a thick white emulsion will form at the bottom of the cup (this means the yolk has started to emulsify the oil).
