
Classic potato cakes are made commercially from leftover sponge cake scraps, but at home you can just as easily make them with cookies. These little cakes come together very quickly and with minimal effort. Using the ingredients listed here, I ended up with 9 cakes.
Ingredients:
- 300 g cookies (such as shortbread or butter cookies)
- 200 g condensed milk (1/2 can)
- 100 g butter
- 2 tbsp heaping cocoa powder
- 2 tbsp cognac (optional)
- 1/5 tsp vanilla powder

How to cook cookie-based potato cake pops
Crush the cookies into fine crumbs using a food processor, blender, or by placing them in a sturdy zip-top bag and rolling with a rolling pin.

Mix the softened butter with the condensed milk until smooth and uniform (if they don't blend easily, microwave briefly to warm slightly).
