
Squid stuffed with boiled rice, sautéed mushrooms, and cheese. This is a delicious, hearty dish that's also quite unique. It can be served cold as an appetizer, or hot if you prefer.
Ingredients:
- 3 squid tubes (about 400 g)
- 200 g cooked rice
- 200 g cremini mushrooms
- 100 g onion
- 100 g cheese
- 1-2 tbsp sour cream (or mayonnaise) + more for brushing
- salt
- pepper
- vegetable oil for frying

How to cook squid stuffed with rice and mushrooms
Add the mushrooms and cook for 15–20 minutes, until all the released liquid has evaporated. Season with salt and pepper.

Add 1–2 tbsp of sour cream (or mayonnaise) and mix well. Adjust salt if needed. The filling is ready.

Thaw the squid. If the squid still has its skin, remove it under a stream of hot water, pull out the cartilage from inside, and rinse thoroughly inside and out. Fill the squid with the stuffing, but don't pack it too tightly.
