Grate the zucchini on a fine grater.
Add the egg, salt, and pepper, and mix well.
Add the flour and stir to combine.
Heat vegetable oil in a skillet over medium heat. Spoon the zucchini mixture into the pan to form fritters and cook for 3–5 minutes.
Flip the fritters and cook on the other side. Cover with a lid and cook for another 10–15 minutes over the lowest heat.
