
I already have a recipe for classic cottage cheese sochniki on my site — a baked treat many people have loved since childhood, myself included. Today, though, I'm excited to share a new sochniki recipe featuring not only a fun banana-shaped look but also a delicious filling made with that very fruit. These sochniki turn out incredibly tasty, wonderfully fragrant, tender, and soft. I absolutely love this kind of baking, where simple ingredients deliver truly outstanding results!
Ingredients:
- 200 g flour
- 100 g butter
- 100 g sour cream
- 50 g sugar
- 1 tsp baking powder
- pinch of salt
- Filling:
- 1 small banana
- 200 g cottage cheese
- 50 g sugar
- 1 tbsp flour
- 1-2 tbsp shredded coconut (optional)
- 1 tsp vanilla sugar

How to cook banana sochniki
The dough should be soft and pliable. You may need a little more or a little less flour depending on its absorption capacity — do not make the dough stiff or dense. Refrigerate the dough for 20–30 minutes or longer.

Prepare the filling. Mash the banana with a fork, ideally not into a completely smooth paste — leave some small pieces.

Add all the remaining filling ingredients. The cottage cheese should be soft, smooth, and creamy. If yours isn't, press it through a fine-mesh strainer beforehand and stir in a little sour cream.

Repeat with the remaining dough and filling. Arrange the pieces on a baking sheet lined with parchment paper.
