
An appetizer made with tomatoes, cucumbers, bell pepper, savory black olives, and salty cheese. This snack is essentially a classic Greek salad in terms of ingredients, which is exactly why I came up with the name "Greece." Of course, you can swap in any other vegetables you like, and feel free to use whatever cheese you have on hand.
Ingredients:
- 200 g tomatoes
- 200 g cucumbers
- 200 g cheese (feta, or brined white cheese)
- 150 g bell pepper
- 1 can black olives (200 g)
- olive oil
- pepper

How to cook Greece veggie canapés
Thread a black olive, bell pepper, tomato, cucumber, and cheese onto a skewer. Feta is very soft and delicate, so it may crumble when pierced. Avoid pushing the skewer all the way through — just barely catch the cheese on the very tip. I recommend using a firmer feta than I did, or substituting brined white cheese or another cheese of your choice.
