
These lazy vareniki are incredibly tender and melt in your mouth. I used store-bought smooth cottage cheese at 9% fat. This recipe makes 3–4 servings.
Ingredients:
- 500 g cottage cheese
- 50 g sugar (≈5 tbsp)
- 50 g flour (≈5 tbsp) + 2-3 tbsp for dusting
- 1 egg
- salt
- butter for serving

How to cook lazy vareniki
Mix the cottage cheese with the sugar and a pinch of salt. If your cottage cheese is lumpy rather than smooth, press it through a fine colander or sieve first.

Add the flour and mix thoroughly (the cottage cheese mixture will be sticky). If the mixture seems too runny, your cottage cheese was too watery to begin with — just add more flour as needed!

Dust a cutting board (or your work surface) with flour. Drop a heaping tablespoon of the cottage cheese mixture onto it. Sprinkle more flour on top.
