Remove the mint leaves from the stems and chop them.
Cut the lemon in half and squeeze out the juice (I got 5 tbsp of juice).
Place the mint and lemon peel in a small saucepan. Add 1 liter of water, bring to a boil, and simmer over low heat for 2-3 minutes.
Turn off the heat and add the sugar.
Let cool until warm, then strain. Add the lemon juice and refrigerate until completely chilled.
Mint lemonade is best served with a small sprig of mint and ice cubes (especially in the summertime).
