
Today I have a recipe for the most delicious dessert! It looks just like a cheesecake — shortbread cookies on the bottom, a cream cheese layer in the middle, and a luscious cherry sauce on top. Since it's not quite a cheesecake in the strictest sense, I put the word in quotes, but thanks to the cream cheese and cookies, the flavor really is reminiscent of one)) It takes minimal effort to make with maximum results — you could easily serve this at even the fanciest dinner party. Though my taste-testers and I took care of it ourselves)) Everyone wanted seconds! So delicious! I made 6 servings; in the photos I'm using 325 ml glasses, though they aren't filled all the way to the top.
Ingredients:
- Bottom layer:
- 100 g shortbread cookies (such as Jubilee or similar)
- White layer:
- 250 g cream cheese
- 250 g heavy cream 33%
- 30 g sugar
- 10 g vanilla sugar
- Cherry layer:
- 450 g cherries (fresh or frozen)
- 80 g sugar
- 1 tbsp. cornstarch (leveled)
- 1 tbsp. lemon juice

How to cook cherry "cheesecake" in a glass
Prepare the cherry sauce. Pit the cherries and place them in a small saucepan. Add the sugar and lemon juice, then bring to a boil. There's no need to add water — as the berries heat up they'll release their juice, and it will be plenty. If needed, mash the berries slightly with a potato masher. In a separate cup, mix the starch with 2 tbsp. of cold water. Pour the starch mixture into the cherries while stirring continuously, and cook until thickened.

Prepare the white layer. Whip the heavy cream to very stiff peaks, gradually adding the sugar and vanilla sugar. Add the cream cheese and beat until smooth. Taste and add more sugar if desired.
