They taste like something in between fluffy kefir pancakes and soft cottage cheese fritters. Since there are no eggs in this recipe, the pancakes do deflate a little, but not nearly as much as egg-based pancakes do. Ingredients:
- 200 g cottage cheese
- 200 g kefir
- 150 g flour
- 40 g sugar
- 1 tsp baking soda (level)
- pinch of salt
- oil for frying

Preparation
Add the kefir, sugar, and salt, and mix well. If you're using chunky cottage cheese, either press it through a fine-mesh strainer beforehand or blend it at this stage after adding the kefir.

Heat vegetable oil in a skillet, or a mix of half butter and half vegetable oil. Using two spoons, drop portions of the batter into the pan to form pancakes and fry on the bottom side.
