
Fortune cookies actually originated in China. The cookie is baked as a thin round wafer, a slip of paper with a fortune is placed inside, and then the cookie is folded while still hot and allowed to set into its signature shape. These cookies are perfect for entertaining guests at parties, banquets, kids' celebrations, or New Year's Eve. Each guest picks a cookie, breaks it open, and reads their fortune while they eat. The key is to come up with fitting fortunes or wishes. With the amounts listed here, I got 12 cookies.

If you have a vivid imagination, feel free to write your own fortunes and wishes. Print them out and cut them into strips about 1–1.5 cm wide. If you don't have a printer, you can write them by hand.

Draw circles 8–9 cm in diameter on a sheet of parchment paper. I traced a regular metal lid — it was exactly 9 cm. Then flip the sheet over; the circles should still be visible through the paper.

Spoon about 1.5 tsp of batter into the center of each circle and spread it to fill the circle. If you're not sure about the quality of your parchment paper, grease it well with butter beforehand so the wafers don't stick. I'd recommend baking 2–3 wafers at a time, though if you have a helper you can do more. The reason is that you need to shape the cookies fairly quickly while they're still hot. Bake in an oven preheated to 200°C (400°F). Bake for 5–10 minutes (I baked mine for exactly 8 minutes). The edges of the cookies should be nicely browned, about 1–2 cm deep.

As soon as they're done, remove one wafer from the baking sheet with a spatula (leave the rest in the oven for now). Place a fortune slip in the center and fold the cookie in half (it's best to do this with gloves on — it's very hot).

Place the cookies in a small cup or glass to hold their shape. You can also press something on top to keep them from unfolding. The cookies cool in about 10 minutes. If the finished, cooled cookies don't snap with a crisp sound but instead stay somewhat flexible, they weren't baked long enough. Do not store finished cookies in a plastic bag, or they'll lose their crunch.
