It's been a while since I shared any soup recipes, so let me fix that. Today I have a recipe for a wonderfully delicious and hearty soup — the kind that's truly made for winter and warms you right up. I made this soup with a meat-based broth, but chicken or vegetable broth works just as well. I used canned red beans, but you can absolutely use beans you've cooked yourself from scratch. I used ham and hunting sausages, but if you can't find hunting sausages, feel free to substitute another similar sausage you enjoy. What defines a German sausage soup is the essential combination of green cabbage, smoked meats, and caraway seeds. The caraway seeds give the soup a very distinctive and unique flavor. The soup turned out so delicious that we had it for lunch and then again for dinner! It's incredibly aromatic and filling!
Ingredients:
- 1.2 l broth
- 250 g potatoes
- 150 g hunting sausages
- 150 g ham
- 150 g green cabbage
- 100 g onion
- 100 g celeriac (celery root)
- 1 can red canned beans (250 g)
- 1 can canned tomatoes in their own juice (400 g)
- 0.5–1 tsp caraway seeds
- 0.5 tsp oregano
- 0.5 tsp garlic powder
- salt, pepper

How to cook german sausage soup
I used beef broth, which I made ahead of time from a beef shank. Pour the measured amount of broth into a pot and bring to a boil.

Add the shredded green cabbage, beans (drained) and pre-crushed tomatoes. Cook for 15 minutes. Add the spices, pepper, and a little salt.
