
I already have one mushroom soup with processed cheese on my site that, judging by the number of comments, has been very popular. This time I experimented and made another processed cheese soup, but based on ground meat — it turned out just as delicious, every bit as good as the mushroom version mentioned above. As my husband said after tasting it: "apparently, any soup with processed cheese is destined to be a hit" :-)
Ingredients:
- 300 g ground meat (beef or pork-beef blend)
- 300 g potatoes
- 100 g carrots
- 100 g onion
- 100-150 g processed cheese
- 1 tbsp sour cream
- salt
- pepper
- 1 tbsp vegetable oil + 20 g butter (for frying)

How to cook meat soup with processed cheese
Heat the vegetable oil and butter in a heavy-bottomed pot. Add the onion and carrots and cook until soft, about 5–7 minutes.

Pour in 1 liter of boiling water, or a little more depending on how thick you want the soup. Add the potatoes, season with salt and pepper. Simmer for 20–40 minutes, until the potatoes and meat are tender.

Add the processed cheese, stir well, and cook over the lowest heat for about 3–5 minutes until the cheese is fully melted. If you are using processed cheese wedges, it's a good idea to cut them into pieces beforehand so they dissolve in the soup more quickly.
