
A recipe for a very simple and fragrant grape cake! The cake is made with olive oil for a subtle depth of flavor — I used unrefined, but refined works just fine too. You can also substitute regular refined sunflower oil if that's what you have on hand. Vanilla and orange zest are added to give the cake a wonderful aroma.
Ingredients:
- 2 eggs
- 120 g sugar
- 50 g butter
- 50 ml olive oil
- 50 ml milk
- 200 g flour
- 300 g grapes (I used seedless Thompson/sultana grapes)
- 1 tsp baking powder (or 1/2 tsp baking soda, neutralized)
- 1/2 tsp vanilla sugar (or a pinch of vanilla powder)
- zest of 1 orange

How to cook grape cake
Add the melted butter (I melted mine in a cup in the microwave), then pour in the olive oil and milk. Add the orange zest and vanilla sugar (or vanilla powder) and beat to combine.

Add the flour and baking powder (or neutralized baking soda) and stir with a spoon. The batter will be thick.
