
A delicious green borscht made with chicken broth, with a pleasant tangy flavor. This dish is also known as green shchi. If you like, you can make green borscht with a different broth — beef, for example — or with no broth at all for a meatless version.
Ingredients:
- 300 g chicken (1 leg quarter)
- 300 g potatoes
- 100 g onion
- 100 g carrots
- large bunch of sorrel (150 g)
- 1 tbsp butter
- salt
- pepper
- eggs for serving
- sour cream for serving

How to cook green borscht with sorrel
Pour 1.5 liters of water into a pot, add the chicken leg quarter and a whole peeled onion. Cook for 30 minutes from the moment it comes to a boil.

Boil the eggs for 10 minutes from the moment the water comes to a boil. Cool them down by covering with cold water.
