
Stolichniy Cake was widely sold during the Soviet era and was very popular. This is the official GOST-standard recipe, so you can make it with confidence. Be sure to use good-quality butter, and choose dark raisins with a rich aroma and no seeds.
Ingredients:
- 170 g sugar
- 170 g butter
- 170 g dark raisins
- 3 eggs
- 250 g flour
- 1 tsp vanilla sugar
- 1/2 tsp baking powder
- pinch of salt
- powdered sugar for dusting

How to cook stolichniy cake
Beat the softened butter, sugar, and vanilla sugar together until well combined (you can warm the butter briefly in the microwave beforehand, but do not melt it).

Grease the pan well with butter (I used a 24x10 cm pan). Spoon in the batter and smooth the surface evenly with a spoon.

Dip the handle of a spoon in water and press a deep groove down the center of the batter (this helps the cake split evenly in the right place). Bake in an oven preheated to 170°C for 50–60 minutes, or until fully done.
