Today I'm sharing a recipe for a very simple cake made with minimal ingredients that turns out absolutely brilliant. This cake is made with starch, which gives the baked good an extraordinary tenderness, fluffiness, and moistness. I made the cake with vegetable oil — it should of course be refined. For mix-ins, I used almonds, and for flavor, in addition to vanilla sugar, I used orange zest, though lemon zest would be just as wonderful. The cake came out very tender and light, with a soft, fluffy texture inside and a crispy crust on the outside. It has the most incredible vanilla-citrus aroma! It's simply a dream of a cake — I highly recommend it!
Ingredients:
- 200 g flour
- 200 g sugar
- 100 g starch (potato)
- 120 ml vegetable oil
- 120 ml water
- 3 eggs
- 10 g baking powder
- 10 g vanilla sugar
- a pinch of salt
- Add-ins:
- 100 g nuts (I used almonds)
- orange or lemon zest

How to cook fluffy pound cake
Add the grated zest and chopped nuts (I peeled the almonds beforehand, but that's not required). Instead of almonds, you can use any nuts or dried fruit you like.
