Today I'm sharing a beautiful, delicious, and wholesome dish! On the menu — a broccoli roll with a cream cheese filling! I already have a carrot roll on the site — Carrot Roll with Cream Cheese, which is absolutely delicious, by the way! Today we have its broccoli "sibling." For the filling, I added imitation crab sticks to the cream cheese — it makes it prettier color-wise and gives it a more interesting flavor. And of course, garlic for that extra kick! The roll turned out incredibly soft, tender, and melt-in-your-mouth, with a bold garlic-crab-cheese filling. You can definitely taste the broccoli, so this roll isn't for those who really can't stand it. In my family, everyone loves broccoli, so the roll practically disappeared in one dinner. So good and so delicate! By the way, I also have another savory roll — Cheese and Tomato Roll, and over at Kamelist there's — Spinach Roll with Salmon (also a lovely shade of green, by the way).
Ingredients:
- Crust:
- 400 g broccoli (frozen or fresh)
- 4 eggs
- salt, pepper
- Filling:
- 250 g cream cheese
- 100 g imitation crab sticks
- 2-3 tsp sour cream
- 0.5 tsp garlic powder (or 2 cloves fresh garlic)

How to cook broccoli roll with creamy filling
Cook the broccoli until just barely tender. I cooked mine in the microwave — depending on the wattage, this will take 5–8 minutes. I used frozen broccoli. Alternatively, drop it into boiling water and cook for 3–5 minutes. The broccoli should turn bright green and be slightly soft but still firm. Don't overcook it! Drain the broccoli well — you can even give it a gentle squeeze — then cool it down quickly to preserve its green color. Spread it out in a single layer on a plate and take it out to a cool balcony or put it in the refrigerator.

Add the egg yolks to the broccoli and blend thoroughly with an immersion blender. Season generously with salt and pepper.

In a separate bowl, beat the egg whites with a pinch of salt until soft peaks form. Fold the beaten whites into the broccoli mixture in batches, gently incorporating each addition.

Line a baking sheet with parchment paper, spread the broccoli mixture into a rectangle, and smooth it out evenly.

Make the filling. Place the room-temperature cream cheese in a bowl, add the sour cream and garlic, and mix well. Coarsely grate the imitation crab sticks and add them to the cheese mixture.

Stir everything together — the filling is ready. Taste it and add more garlic if needed; the mixture should have a good kick. If needed, add a little more sour cream — the filling should be very thick but spreadable enough to be spread evenly over the crust.
