
Today I'm sharing a recipe for simple ice cream that's very quick to make and requires just a handful of ingredients. There are many ways to make ice cream — there's the classic method where egg yolks are cooked with milk in a saucepan: Vanilla Ice Cream. You can also make ice cream with the addition of starch — Black Currant Ice Cream — or another easy option is heavy cream with sweetened condensed milk: Coffee Ice Cream with Prunes. Today's version is made with whipped egg whites, which give the finished ice cream a lighter, airier texture and also cut through the richness of the heavy cream, making the final result a little less heavy. All in all, it turns out absolutely wonderful!
Ingredients:
- 160 g heavy cream 33%
- 2 egg whites
- 2-3 tbsp sugar
- 1 tsp vanilla sugar

How to cook creamy vanilla ice cream
The eggs should be fresh, and preferably store-bought. Wash them thoroughly with soap and hot water, then dry them. Separate the egg whites from the yolks. Beat the egg whites, gradually adding half of the sugar, until stiff peaks form.

In a separate bowl, whip the heavy cream with the remaining sugar and vanilla sugar until thick and stiff.

Gently fold the whipped egg whites into the whipped cream in batches, taking care not to deflate the mixture.
