
After recently making Coffee Ice Cream, I was convinced it was hands down the best ice cream I'd made in a long time — that nothing could top it.)) But after making today's lemon ice cream, my confidence took a serious hit, and now I honestly don't know which one is my current favorite.)) This lemon ice cream turned out absolutely incredible — creamy, with a distinct but not overpowering lemon flavor. It's incredibly easy to make: you simply fold whipped heavy cream into lemon curd. The curd is the same as in this Meringue Cake — essentially, I made the lemon ice cream the same way as the frosting in that cake, except I left out the cottage cheese and increased the amount of heavy cream to give it a more mellow flavor. In the cake, the frosting is paired with the layers and needs a bolder contrast, whereas ice cream is enjoyed on its own and should have a softer, more delicate taste.
Ingredients:
- 550 g heavy cream 30-33%
- 150 g sugar
- 70 ml lemon juice, zest (1 lemon)
- 3 egg yolks
- 1 tsp vanilla sugar

How to cook lemon ice cream
Cook, stirring occasionally, until thickened. The mixture may bubble actively (as you can see in the photo), but the egg yolks won't curdle thanks to the high acid content. Let the finished curd cool completely.

Add the lemon curd and fold together thoroughly with a spatula. The mixture will thicken — that's normal. Transfer to a container and place in the freezer for about 2–4 hours.

During the freezing time, stir the ice cream a couple of times with a spatula, scraping it away from the sides.

Once the ice cream reaches a "soft-serve" consistency and becomes difficult to stir, transfer it to an airtight container and return to the freezer to freeze completely.

Before serving, remove the container from the freezer 5–7 minutes ahead of time to let the ice cream soften. I garnished mine with dried cherries and marshmallows. Later, after taking photos, I also sprinkled grated dark chocolate on top — and that turned out to be the winning combination, absolutely unbelievably good! This lemon ice cream has a creamy flavor with a bright, gentle, and very pleasant lemon taste and aroma. I highly encourage you to treat yourself and your loved ones to this amazing dessert. And don't forget to top it with chocolate!
