
Traditional Belarusian kolduny consist of a potato base with a meat filling. They're incredibly easy to make, and the result is a hearty, delicious dish. Kolduny are similar to draniki (potato pancakes), but they're not quite the same thing. The key difference is that the excess moisture is drained from the potatoes, which allows you to shape the patties properly. With just a handful of ingredients, you'll have a wonderful, filling main dish perfect for lunch or dinner. I ended up with 7 pieces.
Ingredients:
- 1 kg potatoes
- 300 g ground meat (I used half pork, half beef)
- 100 g onion
- 1 tbsp sour cream
- salt
- pepper
- vegetable oil for frying

How to cook kolduny
Finely chop half of the onion as small as possible. Add the onion, salt, pepper, and any other seasonings (to taste) to the ground meat. Knead the mixture thoroughly until well combined.

Peel the potatoes and grate them on the finest grater setting into a purée, along with the second half of the onion (I used the grater attachment on a food processor). Immediately stir in the sour cream and mix well.

Heat vegetable oil in a skillet and add the kolduny. Fry over medium heat for about 5 minutes until golden brown.
