
As you may have noticed from my blog, I love cream soups — both making and eating them!)) And today, meet the newest addition — a wonderfully delicious tomato cream soup! For this soup, it's really important to use flavorful, in-season tomatoes. Go for a meaty variety with few seeds rather than a watery one — something like Roma tomatoes works great, which is exactly what I used. You can use any cut of chicken you like; I went with two boneless drumsticks. Feel free to experiment with spices to your taste, but today I'm going with an Italian-inspired variation featuring marjoram, basil, and thyme! And garlic — garlic is absolutely essential in a soup like this! This recipe makes about 3–4 servings. The tomato cream soup turned out absolutely wonderful! The three of us — my husband, my daughter, and I — devoured it in no time! So delicious and so beautiful!
Ingredients:
- 800 g tomatoes
- 300 g chicken
- 150 g onion
- 1 tbsp olive oil
- spices to taste (I used marjoram, basil, thyme, garlic)
- salt, pepper
- For serving:
- heavy cream, chicken

How to cook tomato cream soup
Cover the chicken with 300 ml of water, add salt, and cook for 15–20 minutes or until done. Reserve the broth. Score the tomatoes with a cross-cut and pour boiling water over them. Let them sit for 5–7 minutes, then drain. This will make it easy to peel off the skins.

Roughly chop the onion and place it in a heavy-bottomed pot with the olive oil. Sauté until softened.

Season with salt, pepper, and spices — I used about 1/2 tsp each of marjoram, basil, and garlic, plus 1/3 tsp of thyme. Add about one cup of the reserved chicken broth.

If your tomatoes were very acidic, you can add a pinch of sugar to balance the flavor. Blend the soup smooth with an immersion blender. The soup turns out a gorgeous red-orange color!

Serve hot, warm, or even cold — I personally prefer it warm. When serving, add some diced chicken to each bowl and drizzle with a little heavy cream. The cream is a must! It beautifully mellows the flavor of the soup and really brings it all together! This tomato cream soup turns out incredibly silky, vibrant, beautiful, and of course absolutely delicious!
