
Delicious and healthy vegetable fritters made with broccoli. I already have Green Pea Fritters, Zucchini Fritters, Cauliflower Fritters on the site, and I thought — why not use broccoli for the same purpose? So now broccoli fritters are joining the lineup too)) To give them a little extra kick, we'll add cheese, onion, and a touch of garlic, plus carrots for a pop of color! The result is not only beautiful, but healthy and delicious! This recipe made 12 medium-sized fritters.
Ingredients:
- 500 g broccoli (frozen or fresh)
- 50 g carrots
- 50 g onion
- 50 g cheese
- 30 g flour
- 2 eggs
- salt, pepper, garlic powder
- For frying:
- ghee or a half-and-half mix of vegetable oil and butter

How to cook broccoli fritters
Bring a pot of water to a boil and salt it. Add the broccoli (if using frozen, do not thaw it first) and cook for just 2–3 minutes. The broccoli should turn bright green but stay firm — it's better to undercook it than overcook it.

Cool the broccoli down quickly right away — for example, spread it out in a single layer on a plate and put it in the refrigerator or freezer.

Melt the butter in a skillet and drop in the mixture shaped into fritters. I shape each one by rolling a ball in my hands, pressing it flat, and placing it in the pan. Since these are healthy fritters, there's minimal flour and lots of vegetables, so at first it might seem like flipping them will be impossible… but it'll work out)) Let the bottom side get nicely browned, then reduce the heat — you can cover with a lid — and let them set.
