
These tasty and beautiful green pea fritters are perfect as an appetizer or a light dinner. In winter we crave bright, vibrant colors, but the weather usually doesn't cooperate — so let's make these colorful veggie fritters and bring a little summer into our lives. The fritters turn out bright, hearty, and of course delicious. To make them even better, I drizzled them with a sour cream sauce and topped them with a bit of fish. The result was absolutely amazing! P.S. I got 16 fritters out of this recipe.
Ingredients:
- 400 g frozen green peas
- 2 tbsp sour cream
- 1 egg
- 50 g flour
- 1 tsp baking powder
- salt, pepper
- clarified butter or vegetable oil (for frying)
- Sauce:
- 80 g sour cream
- 80 g mayonnaise
- 1 tsp lemon zest (optional)
- salt, pepper
- Also:
- salted red fish

How to cook green pea fritters
Add the egg and sour cream, then thoroughly(!) blend the mixture with an immersion blender until you get as smooth a purée as possible.

Cook as fritters in clarified butter or a mix of vegetable and butter — I used clarified butter. To keep the fritters nicely shaped, after flipping I press the sides of each fritter gently with a spatula to even them out. Fry over low heat so they don't get too dark and the fritters stay bright and vibrant in color. Cook for just 1–2 minutes per side, then cover with a lid and let them finish cooking over low heat for another 5 minutes or so.

Make the sauce. Combine sour cream and mayonnaise in equal parts, season with salt and pepper, and add a little lemon zest if desired.

These fritters are great hot, warm, or at room temperature — I loved them every way. Spoon a little sauce onto each fritter and top with a slice of salted fish. If you don't have any salted fish on hand, they're still delicious without it! These green pea fritters are wonderfully eye-catching and are sure to delight everyone with their bright color and great flavor!
