
Today I have a beautiful and delicious recipe featuring potatoes. These potato pancakes are made from boiled potatoes and served with a bright, vibrant sauce of cucumbers, avocado, and parsley, topped with a slice of salmon. The result is incredibly tasty, unique, and gorgeous! If you don't have salmon on hand, you can substitute a piece of lightly salted herring or salted cheese for that same savory contrast!
Ingredients:
- Pancakes:
- 700 g potatoes
- 70 g sour cream
- 70 g flour
- 1 egg
- salt, pepper
- Salsa:
- half a long cucumber
- half an avocado
- quarter of an onion
- parsley
- 1 tbsp olive oil
- 1/2 tbsp lemon juice
- salt, pepper
- For garnish:
- lightly salted salmon

How to cook potato pancakes with green salsa and salmon
Peel the potatoes and boil in salted water until tender. Drain all the water and mash the potatoes with a potato masher.

Add the sour cream and egg, season with salt and pepper, and mix thoroughly. Add the flour and stir to combine. The batter will be thick and sticky.

Melt clarified butter or a mix of butter and vegetable oil in a skillet. Drop the batter onto the pan using two spoons to form pancakes.

Fry on both sides until golden, then cover with a lid and cook through for about 5 minutes. Serve hot.
