
A light cottage cheese bake with raspberries — if you don't have raspberries, you can substitute other sweet berries or fruit. If the raspberries are frozen, make sure to thaw them first. You can use cottage cheese of any fat content; I used 9% cottage cheese. If your cottage cheese is coarse-grained homemade variety, press it through a fine-mesh colander beforehand.
Ingredients:
- 200 g cottage cheese
- 50 g sugar
- 20 g starch (potato)
- 2 eggs
- 1 tsp lemon zest (fresh or dried)
- 100 g raspberries (fresh or frozen)
