
A delicious lavash recipe with cottage cheese and apples in caramel sauce. The recipe is very simple to make. I used firm, sweet-tart apples, but you can use any apples — just adjust the amount of sugar up or down accordingly. I also added lemon juice, which brings out the flavor of the apple filling, and lemon zest, which gives the dessert a more refined taste and aroma. It turned out absolutely delicious, and best of all — quick and beautiful!
Ingredients:
- Base:
- 200 g lavash
- Cottage Cheese Filling:
- 400 g cottage cheese
- 50 g sugar
- 1 egg
- 1 tsp vanilla sugar
- Apple Filling:
- 3 apples
- 50 g sugar
- 50 g butter
- zest of half a lemon
- juice of half a lemon
- a pinch of salt

Preparation
Peel the apples and cut them into very small cubes. Add the juice and zest of half a lemon. Stir to combine.

Simmer over low heat, covered, for about 5–7 minutes until partially cooked. My apples were very firm, so I simmered them. If your apples are soft or a dessert variety, you can skip this step — just stir them in and continue with the recipe.

Prepare the cottage cheese filling. Blend the cottage cheese, sugar, egg, and vanilla sugar thoroughly with a blender until smooth. The mixture should be fairly spreadable — easy to spread over the lavash, but not too runny. The consistency will depend on the type of cottage cheese you use, whether it's a grainy, homestyle variety or a soft, creamy one.

Lay out the lavash (I used two sheets of lavash, 100 g each; the photo shows one sheet). Spread half of the cottage cheese filling evenly over it.

Transfer the apples along with the caramel into a baking dish and spread them out evenly. Use a small dish so the rolls fit snugly side by side.

Remove the finished dish from the oven, place a large plate on top, and flip it over. If there is still liquid caramel on the bottom of the dish that hasn't been absorbed into the lavash, be careful when flipping — it may spill over the sides.

The lavash with cottage cheese and apples can be served warm or fully cooled — it's delicious either way. Warm, the cottage cheese flavor is more pronounced; cooled, the sweet-tart apple topping takes center stage. Try it both ways to see which you prefer!
