Arugula Salad with Quail Eggs

Ingredients:

  • 1 bunch arugula
  • 10 quail eggs (or 3 chicken eggs)
  • 5 small tomatoes (or 3 large)
  • 4 strips smoked trout (any other red fish will work)
  • 4 tbsp vegetable oil
  • 1 tbsp vinegar
  • 1/2 tsp herbes de Provence (or another spice blend of your choice)

Boil the quail eggs for 5
Peel the eggs and cut each one
Cut the tomatoes into quarters
Cut the trout into thin strips.
