
A delicious arugula salad with quail eggs and slices of red fish! You can easily substitute regular chicken eggs for the quail eggs — just cut them into smaller pieces. This salad is both tasty and nutritious!
Ingredients:
- 1 bunch arugula
- 10 quail eggs (or 3 chicken eggs)
- 5 small tomatoes (or 3 large)
- 4 strips smoked trout (any other red fish will work)
- 4 tbsp vegetable oil
- 1 tbsp vinegar
- 1/2 tsp herbes de Provence (or another spice blend of your choice)
- salt
