
A simple, light herring and egg salad that makes a great addition to lunch or dinner. It comes together especially fast if you use ready-made herring from a jar.
Ingredients:
- 200 g herring fillet (I used ready-made salted herring fillet pieces)
- 100 g onion
- 2 eggs
- 1 bunch leaf lettuce
- 1 tbsp vegetable oil
- 1 tsp vinegar
- 1 tsp mustard (I used whole grain mustard, but any kind works)

How to cook herring and egg salad
Hard-boil the eggs (cook for 10 minutes after the water comes to a boil). Cool them down by covering with cold water.

If the herring fillet pieces are large, cut them into smaller pieces. If you're using a whole herring, gut it first, rinse it, fillet it, and remove the bones.
