
Today I'm sharing a fresh, delicious summer salad that I made for a recent family lunch. The bottom layer is three kinds of greens — in my case, leaf lettuce, arugula, and frisée — topped with juicy, crunchy cucumbers and radishes. Above that come hard-boiled eggs, salty feta, and sweet corn. It's all finished off with a wonderful mayonnaise-and-yogurt dressing. The salad turned out absolutely fantastic — crisp and juicy, tender and tangy all at once! P.S. Makes 2–3 servings, about the size you see in my photos.
Ingredients:
- 4 eggs
- 1 cucumber
- 5 radishes
- 3 tbsp canned corn
- 150 g feta (or brynza/brine cheese)
- mixed salad greens
- Dressing:
- 5 tbsp mayonnaise
- 2 tbsp yogurt
- 1 tbsp lemon juice
- parsley
- salt, pepper
