
Today I have a great recipe for a simple cheese pie made with yeast dough! Cheese recipes make up a big part of my collection — simply because I love cheese)) Here are some examples of other cheese pie recipes: Khachapuri with Cheese, Meat Pie with Cheese, and Mushroom and Cheese Pie. The second pie also uses a cottage cheese dough, which I also love. That dough may resemble a shortcrust pastry, but it has a cottage cheese flavor. There are also plenty of simple cheese pie recipes — Simple Cheese and Sausage Pie. There are recipes with cheese in puff pastry — Cheese Puff Pastries, and a savory pour-over pie with a feta filling — Feta and Tomato Pie. But let's get back to the cheese pie! For this recipe I used a simple yeast dough. You only need to knead it once, which takes a bit of your time, but beyond that everything comes together very easily. You can use any types of cheese you like — I used Adyghe cheese and Russian-style hard cheese. Feta, Suluguni, or mozzarella would also work well. Since these cheeses tend to be salty (except for mozzarella), it's a good idea to reduce the amount of salt in the recipe. My pie turned out absolutely delicious. I even let my 10-month-old son try a piece — he was smacking his lips with delight)) My husband and daughter, being big cheese lovers, were equally impressed. Give this tasty yeast dough cheese pie a try. Homemade cheese baking is always a winner!
Ingredients:
- Yeast Dough:
- 450 g flour
- 250 g milk
- 50 g butter
- 1 egg
- 2 tsp sugar
- 1 tsp salt
- 1.5 tsp dry yeast
- Cheese Filling:
- 350 g Adyghe cheese
- 150 g hard cheese
- 150 g butter
- Topping:
- egg, sesame seeds

How to cook cheese pie
In a separate bowl, mix the warm milk and egg together. If you don't have milk, you can use kefir or water. Add the liquid mixture to the flour.

Mix well, then add the softened butter and mix again. Knead the dough for about 5–10 minutes. A stand mixer makes this easiest, but kneading by hand on a work surface works great too. Place the dough in a warm spot and let it rise until it has doubled or tripled in size. I like to put the dough in a slightly warmed oven (I turn on the heat for just a couple of minutes).

Prepare the cheese filling. Grate all the cheeses on a grater — a coarse one works best. Mix them together. If you'd like, you can add some fresh herbs, such as green onions, for extra flavor. Divide the cheese mixture into 6 equal portions.

Here's a photo of the finished pie dough. If you'd like, you can freeze half the dough so you can make one small pie now and save the second one for later. This is a good idea if you don't have a lot of mouths to feed.

Turn the dough out onto a floured surface. Punch it down and divide it into 6 pieces. Add more flour if needed. Lightly knead each piece into a ball.

Brush the dough with melted butter (1/6 of the total amount). If you prefer, you can use softened butter and simply spread it over the dough. Melted butter is easier to work with, but use whichever method you like.

Roll everything up into a log. Gently roll it back and forth, stretching it slightly to make it a little longer.

Grease a baking pan with butter — I used a 24 cm pan. Transfer the rolled dough to the pan and pinch the edges together to seal. Make cuts down to the bottom of the dough on the inside, starting about a third of the way from the center on each side.

Let the dough rest in a warm spot for about 20–30 minutes to rise a little more. Brush the surface with a raw egg (or just the yolk), then sprinkle with sesame seeds. If you'd like, you can top it with something else to your taste — flaxseeds or more grated cheese would also be delicious.

Bake in an oven preheated to 180°C. You can also bake at 200°C, but keep an eye on the top. Once it turns a gorgeous golden brown, the pie is done. Baking will take about 30 minutes, though it may take longer in your oven. The center of the pie will close up completely during baking, and the finished pie will have a beautiful shape.
