
Maslenitsa is just around the corner, which means it's time to start getting ready for the holiday. And today I have a incredibly delicious and wonderfully simple recipe for you! Lazy Finnish pancakes are baked in the oven all at once. Just imagine — no standing at the stove frying each individual pancake in a pan! I really can't think of anything easier: mix it all together, pour it onto a baking sheet, and into the oven it goes. A magical recipe! Despite how simple it is, the result is absolutely delicious. To flavor the pancake I added lemon zest and vanilla sugar — though that's optional — and I served it with mascarpone and cherries (from frozen). My daughter couldn't wait for me to finish plating it and started eating it straight from the oven, no toppings at all, just tearing off pieces from the whole pancake sheet.)
Ingredients:
- 500 ml milk
- 250 g flour
- 30 g butter
- 3 eggs
- 2 tbsp sugar
- 1 tsp vanilla sugar
- 0.5 tsp salt
- zest of half a lemon
- Topping:
- 250 g mascarpone or whipped cream
- 2-3 tsp powdered sugar
- berries, preserves, or jam

How to cook lazy Finnish pancake (Pannukakku)
Make the batter just like you would for regular pancakes. In a bowl, combine the eggs, sugar, vanilla sugar, salt, about half the milk, and the flour. Mix thoroughly until no lumps remain. Add the rest of the milk and stir to combine.

Line a baking sheet with parchment paper, making sure it comes up along the sides, then pour in the batter.

Bake in an oven preheated to 200°C for about 30–40 minutes, or adjust based on your oven. The pancake will puff up into large, dramatic waves. Once done, cut the pancake into individual squares using a pizza cutter and serve immediately while still hot.

Serve the pancake warm — it tastes best that way — and reheat in the microwave if needed. Mix the mascarpone with powdered sugar to taste, or whip the cream with powdered sugar. Spoon onto the warm pancake, then top with berries or jam. You can also drizzle with honey or dust with powdered sugar.
