One of the most popular healthy-eating dishes made with rolled oats, known as an oat crepe. It makes a perfect breakfast and can be made either sweet or savory. This time I went with the savory version, adding cheese and avocado — but the possibilities are endless. You can use cream cheese or lightly salted cottage cheese, tomato, pieces of cooked chicken, and much more. For a sweet version, try mascarpone, sour cream, banana, berries, and more — just dust lightly with powdered sugar and you're done!
Ingredients:
- 1 egg
- 20 g rolled oats (2 tbsp.)
- 30 g milk (2-3 tbsp.)
- salt
- Filling:
- 40 g cheese
- avocado

How to cook oat crepe
Pulse the rolled oats briefly in a food processor, but don't grind them too fine. If you're using quick-cooking oats, you can skip this step — I've made it both ways and it turns out just as good either way.
