
Sweet cherry season is here — juicy, fragrant, and perfectly ripe — so today I'm sharing a recipe built around them. I went with a simple but winning flavor combination. I thought back to my sour cream-based jello — Sour Cream Jello — and paired it with a sweet cherry jello layer. Sour cream jello isn't jello in the traditional sense; it's a delicate mousse that holds its shape beautifully and has a wonderfully distinctive flavor. If you'd like, you can swap the sour cream for heavy cream, just like in Panna Cotta — it'll be just as delicious! P.S. My quantities are calculated for six 250 ml glasses. I used 20% fat sour cream; ideally, it shouldn't be too sour.
Ingredients:
- Sweet cherry layer:
- 500 g sweet cherries
- 300 ml cherry juice
- 6 g gelatin
- Sour cream layer:
- 600 g sour cream
- 100 g sugar
- 10 g gelatin
- 5 g vanilla sugar

How to cook sour cream and sweet cherry jello
Pit the cherries. I cut each one open with a knife and removed the pit — with ripe sweet cherries, this is very easy to do.

Soak the gelatin in 4 tbsp of water ahead of time and let it sit for the amount of time indicated on the package. Then heat it until hot so the gelatin fully dissolves (I do this in the microwave), then let it cool. I used store-bought cherry juice from a carton — it was already sweetened, but if yours isn't sweet, you can add a little sugar to taste. Pour the gelatin into the cherry juice while stirring continuously.

Tilt the glasses and prop them up with a towel to hold them at the desired angle. Place the cherries inside, then carefully pour in the juice. Refrigerate for 2–3 hours until set.

Make the white layer. Soak the gelatin in 4 tbsp of water ahead of time and let it sit for the amount of time indicated on the package. Then heat it until hot so the gelatin fully dissolves (I do this in the microwave), then let it cool. Beat the sour cream with the sugar and vanilla sugar until the sugar dissolves. Pour the gelatin in a thin stream directly onto the beaters while continuing to mix. If the mixture turns out too thick to pour easily (this depends on the specific sour cream you use), you can thin it out with a couple of spoonfuls of milk.

Sour cream and sweet cherry jello is a refreshing summer dessert that both kids and adults will love. My husband and I absolutely enjoyed it, and so did our daughter — she was especially thrilled to eat out of a fancy grown-up stemmed glass!
