
Pumpkin is the queen of autumn, but unfortunately most people's use of it is limited to a sweet pumpkin and millet porridge, or pumpkin baked in the oven with sugar or honey. But pumpkin is so much more versatile than that! Today I'd like to try pumpkin in an unexpected role — it'll be fried together with potatoes and chicken, and with garlic in the mix too. Don't even doubt it, this is delicious, it really and truly is delicious! Pumpkin and garlic go together beautifully! The dish turned out incredibly well-balanced, and both my taste-testers and I gave it top marks. When my four-year-old daughter was asked what she was eating, she confidently said it was carrots)) Though I have to say, you can still taste the pumpkin — but it transforms so much here that even people who don't normally like pumpkin, like me, will love this dish! P.S. Don't skip the garlic!
Ingredients:
- 400 g potatoes
- 200 g pumpkin
- 100 g onion
- 3 chicken thighs
- 3-4 cloves of garlic
- salt, pepper
- vegetable oil or ghee for frying
- parsley (fresh herbs, optional)

How to cook fried potatoes with pumpkin and chicken
Cut the meat off the bone, then slice it into large elongated pieces. Place in a skillet heated with a small amount of oil and cook over high heat, stirring, until fully cooked through. Season with salt and pepper. Then transfer to a plate and cover with a lid.

To the same skillet (don't wash it after the chicken), add some vegetable oil and butter (or ghee). Heat the skillet well and add the potatoes, cut into large elongated slices. There should be a good amount of oil, and the skillet should be roomy. Fry, stirring occasionally, over medium-high heat for about 5–7 minutes.

Add the pumpkin, also cut into elongated slices, and the onion sliced into half-rings. Stir everything together and fry for another 10–15 minutes, until the potatoes and pumpkin are fully cooked through. Season with salt and plenty of pepper.
