
Very flavorful and tender carrots — caraway seeds complement the carrots beautifully, and honey adds a touch of sweetness. You can skip the pre-boiling step and roast the carrots straight away. In that case, roast them longer and they'll turn out slightly crunchy.
Ingredients:
- 500 g carrots
- 2 tbsp vegetable oil (olive oil preferred)
- 1 tbsp honey
- 2 tsp caraway seeds
- 1/2 tsp nutmeg
- salt

How to cook roasted carrots
Bring a pot of water to a boil and salt it. Add the carrots to the boiling water and cook for exactly 3 minutes.

Sprinkle with caraway seeds, nutmeg, and a pinch of salt. Drizzle with honey and vegetable oil, then toss to coat the carrots evenly with all the seasonings.
