
The broccoli is first briefly boiled, then baked in a mixture of heavy cream, eggs, and cheese. The key is not to overcook the broccoli — overcooked broccoli becomes completely unpleasant and loses its color. Any heavy cream with a fat content between 10% and 25% works well for this dish.
