
Did you know that cauliflower can be eaten raw? :-) For me, this was quite a revelation at the time, since growing up we never used it raw at home. But it turns out you not only can eat it raw — you really should, because it's actually more nutritious that way. The same goes for broccoli, by the way. These two wonderful vegetables are every bit as good as the more familiar green cabbage, which is of course always eaten raw in salads. Raw cauliflower is juicy and crunchy, and I think many people will enjoy it this way even more than cooked. And if you add some other vegetables and toss it all in a dressing, you've got something that's not just healthy, but truly delicious.
Ingredients:
- 500 g cauliflower
- 50 g onion
- 1 small cucumber
- a bunch of dill
- cooked chicken breast fillet (optional)
- Dressing:
- 70 g mayonnaise (or yogurt or kefir)
- 70 g sour cream
- 1 tbsp soy sauce
- salt
- pepper

How to cook raw cauliflower salad
Thoroughly wash the cauliflower and cut it into fairly small pieces. The smaller, the better — the salad will turn out more tender. You can also chop it in a food processor, just be sure to stop in time so it doesn't turn into crumbs, though that version is tasty too.

For the dressing, mix all the ingredients together until smooth. If desired, you can add minced garlic or other spices to taste.

Toss with the dressing, mix well, and add more salt if needed. If you like, add cooked chicken breast fillet cut into pieces, or any other meat. Alternatively, serve the salad alongside separately prepared meat. It pairs wonderfully with just about any meat — boiled, fried, or roasted chicken, beef, or pork.
