
Shopska salad is a Bulgarian salad made with tomatoes, cucumbers, onion, bell pepper, parsley, and salty brynza (brine cheese). You can use either roasted or fresh bell pepper in this salad. I prefer it with roasted pepper, but it's delicious with fresh pepper too.
Ingredients:
- 400 g tomatoes
- 300 g cucumbers
- 300 g bell pepper
- 50 g onion
- 5-6 sprigs of parsley
- 200 g brynza (brine cheese) (or feta)
- vegetable oil for dressing
- salt
- pepper

How to cook shopska salad
Place the peppers in a baking dish or on a baking sheet. Put them in an oven preheated to 220°C (430°F). Roast for 30–40 minutes, until the skin is charred and blackened. Transfer the roasted peppers immediately to a bag and tie it shut.

Finely chop the onion (if using a sweet variety, it's fine to slice it into thin half-rings instead).
