
Today I have an incredibly delicious and yet very simple recipe for you. On the menu: savory meat pancakes — so tasty, hearty, soft, and aromatic. Mmm... The flavor and aroma remind me of belyashi, and a little of chebureki, but more like belyashi, so these are a kind of lazy belyashi. Use good, fatty ground meat — not lean and dry — and the result will be wonderful. Season to taste; you can also add khmeli-suneli or whatever you like, but don't go overboard with the spices. These turn out incredibly delicious. I love dishes like this — they may not be the healthiest, but they're absolutely irresistible)), so a little every now and then is fine, as long as you can control yourself)). I ended up with 16 pieces in total.
Ingredients:
- 500 g ground meat (I used beef)
- 300 g kefir
- 200 g flour (approximately)
- 70 g onion
- 2 eggs
- 0.5 tsp sugar
- 0.5 tsp baking soda
- spices to taste (I used 1 tsp each of garlic powder and dried dill)
- salt, pepper
- oil for frying

How to cook lazy "belyashi"
Finely chop the onion and sauté in oil until soft and lightly golden. Add the ground meat and cook briefly, stirring. Just 4–5 minutes — it's more of a gentle simmer than a hard sear; you just want the liquid to cook off and the meat to turn opaque.

Mix well. Add the flour and stir again. The amount of flour is approximate — you want a batter about as thick as pancake batter, so adjust as needed.

Stir to combine. The batter is ready. You can let it rest for a bit to allow the gluten to develop, but if you're short on time, you can start frying right away.

Heat oil in a skillet — I used a mix of clarified butter and vegetable oil. Drop spoonfuls of batter into the pan and fry.

Flip and fry the other side. Cover with a lid and cook on the lowest heat for about 5 minutes to cook through.

I served them alongside a simple fresh vegetable salad. The lazy "belyashi" turn out absolutely delicious — and note that the word belyashi is in quotes, because technically these are meat pancakes)) But the flavor and aroma are just like real belyashi, and they're so much easier to make. They really are incredibly good!
